I usually made them on Saturday. Regarding of what I was going to cook for lunch or dinner — I just had them in the pot, cooked and warm. I used to break the corn in half - it was easier to grab for a small snack.
If I wanted to make it part of a meal, I will Olive oil, salt and sometimes cream cheese.
