The beginning of everything ... —white rice (arroz blanco)— in any Ecuadorian meal —  I learnt it from my mom when I was in college. She still claims until this day she doesn't cook but each recipe she has taught me is amazing.

This is the original recipe my mom taught me when she accompany me to Providence , Rhode island during the summer of 92 to attend RISD:

1  cup of rice
1 and 1/2  cups of water
salt
oil

Put it all on a pot on high. When it starts boiling, lower the heat to low and let it cook slowly — it should be ready in 30-40 minutes while you prepare the rest of the meal.

Nowadays, I add chopped garlic (peruvian style) - My mom taught me that too— and she still claims she doesn't cook.
